Hebridean meat has a lower cholesterol content than meat from commercial breeds

As Hebrideans are a slow-maturing breed, the lamb tends to be selected at around twelve months old

Hebridean mutton from 2+ years old is also available a meat which continues to grow in popularity for its mature flavour and dark colour.
